Pairing: Ideal for seafood, sushi, shashimi, salads, tapas. Due to its versatility it goes well with smoked salmon, soft cheese and poultry grilled meats. Serve between 6o and 9oC.
Tasting notes: Clear/Rose salmon. Fresh wine, delicate although with an intense tropical and red fruits aroma. Round on the mouth with a persistent and elegant finish.
Vinification: Selection of the best grapes, with a soft press, where after an 8 to 16 hour cold decantation is fermented in an inert (?) ambient with a temperature between 13o to 15o for 12 days. Bâtonnage over the thin sediments for 1 month, followed by a cold stabilization and soft filtration. The bottling occurs in the beginning of winter, followed by a dim phase on the bottle for at least 2 months.
